Ingredient for Fry Plantains
- Vegetable oil for frying
4 large green plantain peeled and cut 1/2-inch size
In this picture are fry ripe plantains. Liberian serves plantains any time of the day. Lunch, breakfast, dinner etc. One thing I still see even as an adult, is the ways plantains are prep for eating. You can fry plantains, boil with salt, roast etc. Plantains can be the starch part of a meal depending on the stew serve. Most people will eat plantains with stew or (Liberian style gravy) I take it plantains can be pounded and breakdown as Fufu base starch for many meals. I will upload more of that later.
For now, we are making fry plantains. Here we go…
In this recipes I am using about four ripe plantains not too soft. Do you best to peel plantains carefully. Now carefully cut as appears in the picture. Next sprinkle salt on the raw plantains before frying. I like that the salt is cooked in to the plantains. (you should start to heat the oil as you are peeling the plantains; as you will note frying plantains happens pretty fast.)
Now Heat oil in a frying pan (It should be 2 to 3 inches deep on a high heat until the temperature read 356 degree
Carefully place half the sliced plantains in hot oil and fry for about 4 to 5 minutes on each side and turn periodically, when turn golden brown remove and drain on paper towel and repeat with remaining plantain.
Served in a bowl and sprinkle with salt (Optional)
