Cauliflowers, Wild Rice and Mushroom Casserole

As for me, I grew up eating rice on a daily basis. I have no problem maintaining that taste in my mouth; is just that am in this beautiful country,  people  share millions of recipes from around the world. Food is an essential part of this country. Like an immigrant myself I came to form stories from foods. I became to love cooking; so I am open to different meals ideas. This recipe adopted from a client I once work with. What I like about this recipes, all the ingredients are mostly veggies and easy on my budget. Most days when am practicing to eat health on a budget I am in with this meal. I like that it is rice meal and it is healthy too. For me I have been doing my best practicing eating less meal made of pasta and bread for my personal choice to eat healthy. I take it, I can eat all the veggies I want with a good taste.

Cauliflowers and Mushroom Casserole

 

Ingredients

 

2 Packages of 8oz Mushroom (Chopped (of your choice)

2 Heads of Cauliflowers

1 ½ Cups of uncooked Wild Rice

1-2 Lemons Juice (Depending on the size of the lemon)

1 Stick of butter

2 Medium Yellow Onions

1 Cup of Yellow Cheddar Cheese (Optional)

Salt and Pepper for taste

 

Now Follow the Directions….

First cooked the wild rice in a broth of our choice or just cook wild rice with salt as instructed from the wild rice package and set aside.

Next dice onions and set aside; now chop the cauliflower set aside too. Wash mushroom as directed and set aside.

 

Preheat oven at 350 degrees. Prep 9*13 baking pan by oiling base.

 

To speed up preparation time.  Heat half stick of butter in each skillet add the one dice onion and mushroom in one skillet and in another skillet add the onions in a separate skillet and add the chopped cauliflowers. Begin stirring the mushroom and cauliflowers as they are cooking. About two minutes in the cooking process add the lemons juice divided in equal part, to the mushroom and to the cauliflowers add salt and peppers for taste. Continues cooking for five minutes until onions appears to be cooked having a translucent appearance and turn off the heat.

Transfer the cooked rice in the prepared baking pan, add cooked mushroom mixture and the cooked cauliflower. Now combine by stirring and mixing together with wooden spoon. Focus to evenly mix all ingredients well. Finally sprinkle with the yellow cheddar cheese, And bake for about 30 minutes. I served this meal with a side of baked fish.
